Creamy Beef and Tomato Soup Recipe

Ingredients

  • 500 g ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 4 cups beef or chicken broth
  • 1 cup heavy cream
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • Salt and black pepper, to taste
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon tomato paste
  • 1 tablespoon butter
  • Optional: 1/2 teaspoon red pepper flakes

Instructions

1. Brown the Beef

Heat olive oil in a large pot over medium heat. Add the ground beef and cook for about 6–8 minutes, breaking it apart with a wooden spoon.

Continue cooking until the beef is browned and no longer pink. Season with a little salt, black pepper, paprika, and Italian seasoning.

If there is a lot of excess fat in the pot, carefully drain some of it.

2. Add the Aromatics

Add the chopped onion and cook for 3–4 minutes until softened.

Add the minced garlic and cook for another 30–60 seconds, stirring constantly so the garlic doesn’t burn.

Add the tomato paste and stir it into the beef and onions. Cook for another minute. This helps deepen the tomato flavor.

3. Add the Tomatoes and Broth

Add the halved cherry tomatoes and pour in the broth.

Add the oregano and optional red pepper flakes.

Stir everything together and bring the soup to a gentle simmer.

Reduce the heat and let it cook for approximately 15–20 minutes, allowing the tomatoes to soften and the flavors to combine.

4. Make It Creamy

Reduce the heat to low.

Add the heavy cream and milk, stirring gently.

Do not let the soup boil vigorously after adding the dairy, because high heat can cause the cream to separate.

Simmer gently for about 5 minutes.

5. Add the Cheese

Gradually add the shredded cheddar and Parmesan while stirring.

Continue stirring until the cheese melts completely and the soup becomes smooth, creamy, and rich.

Add the butter and stir until melted.

Taste and adjust the salt and pepper.

6. Finish and Serve

Turn off the heat and let the soup rest for 2–3 minutes.

Ladle the hot soup into bowls and garnish with freshly chopped parsley.

For an extra flavorful presentation, add a small sprinkle of Parmesan and a few pieces of browned beef and tomato on top.

Serve immediately with warm crusty bread, garlic bread, or toasted bread for dipping.

Tips for the Best Soup

  • Use 80–90% lean ground beef for a flavorful but not overly greasy soup.
  • Fresh cherry tomatoes give the soup a nice sweet-tart flavor.
  • Add the cheese gradually so it melts smoothly.
  • Keep the heat low after adding the cream and cheese.
  • For a thicker soup, use a little less broth.
  • For a thinner soup, add additional broth or milk.
  • For extra vegetables, add spinach, mushrooms, zucchini, or diced bell peppers.
  • Leftovers can be refrigerated in an airtight container and gently reheated.
