Ingredients (Makes 6 patties):

  • 2 (14.75 oz) cans salmon, drained (or 2 cups cooked fresh salmon)
  • ½ cup breadcrumbs (or panko for extra crunch)
  • ¼ cup finely diced onion
  • ¼ cup finely diced bell pepper (any color)
  • 2 tbsp fresh parsley, chopped
  • 1 egg, beaten
  • 1 tbsp Dijon mustard (or yellow mustard)
  • 1 tsp Old Bay seasoning
  • ½ tsp garlic powder
  • ¼ tsp black pepper
  • 2 tbsp olive oil (for frying)

For Serving:

  • Lemon wedges
  • Tartar sauce or dill yogurt sauce
  • Mixed greens (optional)

Instructions:

1. Prep the Salmon

Drain canned salmon, remove any large bones/skin (or flake fresh salmon).

2. Mix Patties

In a bowl, combine salmon, breadcrumbs, onion, bell pepper, parsley, egg, mustard, and seasonings. Mix gently (don’t overwork).

3. Shape & Cook

  1. Form into 6 equal patties (about ½-inch thick).
  2. Heat oil in a skillet over medium heat. Cook patties 3-4 mins per side until golden and crispy.

4. Serve

Squeeze with lemon and serve with sauce and greens.
