Ingredients:
- 1 lb ground beef (or ground turkey)
- 1 small onion, diced
- 1 (15 oz) can tomato sauce
- 1 (15 oz) can diced tomatoes, drained
- 1 tbsp Worcestershire sauce
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried oregano
- Salt & pepper to taste
- 2 cups frozen corn kernels (or green beans)
- 2 cups mashed potatoes (homemade or store-bought)
- 1 ½ cups shredded cheddar cheese
Optional Toppings:
- ½ cup crushed butter crackers (like Ritz)
- 2 tbsp melted butter
- Sliced green onions
Instructions:
1. Brown the Beef
Preheat oven to 375°F (190°C). In a skillet, cook beef and onion over medium heat until no pink remains. Drain excess fat.
2. Season & Simmer
Stir in tomato sauce, diced tomatoes, Worcestershire sauce, garlic powder, onion powder, oregano, salt, and pepper. Simmer for 5 minutes.
3. Layer the Casserole
In a 9×13-inch baking dish, layer in this order:
- Beef mixture
- Corn
- Mashed potatoes
- Cheese
- Cracker crumbs + melted butter (if using)
4. Bake
Cover with foil and bake for 20 minutes. Uncover and bake 10 more minutes until bubbly and golden.
5. Serve
Garnish with green onions. Let cool 5 minutes before serving.
Tips:
🥔 No mashed potatoes? Use sliced raw potatoes (add 10 mins baking time).
🌶 Spicy kick: Add 1 tsp chili powder to the beef.
