Butter Swim Biscuits

Ultra-fluffy, buttery Southern-style biscuits that bake in a pool of melted butter for golden, crispy edges.

Ingredients:

  • 2 ½ cups (300g) all-purpose flour
  • 1 tbsp baking powder
  • 1 ½ tsp salt
  • 1 tbsp sugar (optional, for slight sweetness)
  • 1 ¼ cups (300ml) buttermilk (or whole milk + 1 tbsp vinegar)
  • ½ cup (1 stick / 115g) unsalted butter

Instructions:

1. Prep the Butter Bath

Preheat oven to 450°F (230°C). Place butter in an 8×8-inch baking dish and melt in the oven (about 2 minutes). Swirl to coat the bottom.

2. Make the Dough

Whisk flour, baking powder, salt, and sugar in a bowl. Pour in buttermilk and stir until just combined (lumpy is fine—don’t overmix!).

3. Bake in Butter

Drop spoonfuls of dough into the melted butter (it’ll pool around the biscuits). Bake for 20-25 minutes until golden and puffed.

4. Serve Hot

Brush tops with leftover pan butter. Pull apart and enjoy!

Tips:
