Ingredients

- 6 large egg yolks

- 1 cup fresh strawberries, hulled and diced
- 2 tbsp granulated sugar
Instructions
Step 1: Prepare the Strawberries (10 mins)
- In a small saucepan, combine strawberries and 2 tbsp sugar.
- Cook over medium heat for 5-7 minutes, mashing slightly, until syrupy.
- Cool completely, then refrigerate.
Step 2: Make the Custard Base (20 mins)
- In a medium saucepan, heat cream, milk, sugar, salt, and vanilla bean seeds + pod over medium heat until steaming (do not boil).
- In a bowl, whisk egg yolks. Slowly pour 1 cup hot cream mixture into yolks while whisking (to temper).
- Return yolk mixture to saucepan. Cook on low heat, stirring constantly, until thickened (170°F or coats the back of a spoon).
- Strain through a fine-mesh sieve, discard vanilla pod, and stir in vanilla extract.
- Chill custard at least 4 hours (or overnight).
Step 3: Churn & Layer (30 mins + freezing)
- Pour chilled custard into an ice cream maker. Churn per manufacturer’s instructions (~20-25 mins).
- In a freezer-safe container, layer churned ice cream and cooled strawberry sauce. Swirl gently.
- Freeze 2-3 hours until firm.
