Super Soft Egg & Milk Vanilla Pancakes

Fluffy, melt-in-your-mouth pancakes with a golden crust and sweet vanilla aroma – ready in 15 minutes!

Ingredients (Serves 3-4):

1 ½ cups (190g) all-purpose flour
2 tbsp (25g) sugar
2 tsp baking powder
¼ tsp salt
1 large egg
1 ¼ cups (300ml) milk (whole milk for extra richness)
2 tbsp (30g) butter, melted (+ extra for cooking)
1 tsp vanilla extract

Optional Add-ins:

½ tsp cinnamon
1 tbsp lemon zest
½ cup blueberries or chocolate chips

Instructions:

1. Mix Dry Ingredients

In a bowl, whisk flour, sugar, baking powder, and salt.

2. Combine Wet Ingredients

In another bowl, beat egg, then mix in milk, melted butter, and vanilla.

3. Make Batter

Pour wet ingredients into dry ingredients. Stir just until combined (small lumps are okay – overmixing makes tough pancakes).

4. Cook Pancakes

Heat a non-stick pan over medium-low heat. Melt a pat of butter. Pour ¼ cup batter per pancake. Cook until bubbles form (~2 mins), then flip and cook 1 more minute.

5. Serve

Stack high and top with maple syrup, fresh fruit, or whipped cream!
