- 2 (14.75 oz) cans salmon, drained (or 2 cups cooked fresh salmon)
- ½ cup breadcrumbs (or panko for extra crunch)
- ¼ cup finely diced onion
- ¼ cup finely diced bell pepper (any color)
- 2 tbsp fresh parsley, chopped
- 1 egg, beaten
- 1 tbsp Dijon mustard (or yellow mustard)
- 1 tsp Old Bay seasoning
- ½ tsp garlic powder
- ¼ tsp black pepper
- 2 tbsp olive oil (for frying)
For Serving:
- Lemon wedges
- Tartar sauce or dill yogurt sauce
- Mixed greens (optional)
Instructions:
1. Prep the Salmon
Drain canned salmon, remove any large bones/skin (or flake fresh salmon).
2. Mix Patties
In a bowl, combine salmon, breadcrumbs, onion, bell pepper, parsley, egg, mustard, and seasonings. Mix gently (don’t overwork).
3. Shape & Cook
- Form into 6 equal patties (about ½-inch thick).
