Ingredients:
- 1 plain yogurt (150g, use the empty cup to measure other ingredients)
- 2 eggs
- 1 yogurt cup vegetable oil (or melted butter)
- 2 yogurt cups sugar (reduce to 1.5 for less sweetness)
- 3 yogurt cups all-purpose flour
- 1.5 tsp baking powder
- 1 tsp vanilla extract
- Zest of 1 lemon (optional)
Optional Add-ins:
- ½ cup chocolate chips
- ½ cup frozen berries
- 2 tbsp shredded coconut
Instructions:
1. Mix Wet Ingredients
In a bowl, whisk yogurt, eggs, oil, sugar, and vanilla until smooth.
2. Add Dry Ingredients
Sift in flour and baking powder. Fold gently until just combined. Add lemon zest or other mix-ins if using.
3. Bake
Pour into a greased 8-inch (20cm) loaf pan. Bake at 350°F (180°C) for 35-40 minutes until golden and a toothpick comes out clean.
4. Cool & Serve
Let cool 10 minutes in the pan, then transfer to a wire rack. Dust with powdered sugar or drizzle with honey before serving.
