Ingredients:
2 pounds ground beef
1 packet French onion soup mix
1 cup breadcrumbs
1/2 cup milk
2 eggs, beaten
1/4 cup ketchup
1 tablespoon Worcestershire sauce
1 cup caramelized onions
1 cup Swiss cheese, sliced
Fresh thyme, for garnish
Directions:
Prepare the Meatloaf Mixture: In a large bowl, combine the ground beef, French onion soup mix, breadcrumbs, milk, beaten eggs, ketchup, and Worcestershire sauce. Mix until thoroughly combined.
Prepare the Crockpot: Line the crockpot with parchment paper or foil to make it easier to remove the meatloaf once it’s done.
Layer the Meatloaf and Fillings:
Press half of the meat mixture into the bottom of the prepared crockpot, spreading it evenly.
Layer the caramelized onions and half of the Swiss cheese slices on top of the meat.
Place the remaining meat mixture over the onions and cheese, pressing gently to seal the edges.
Cook: Cover the crockpot and cook on low for 6 hours or on high for 4 hours.
Add Cheese: In the last 10 minutes of cooking, add the remaining Swiss cheese on top of the meatloaf. Cover again until the cheese is melted.
Serve: Carefully lift the meatloaf out of the crockpot using the parchment or foil. Garnish with fresh thyme before slicing and serving.
