- 4 cups chicken broth
- 1 cup heavy cream
- 3 medium potatoes, diced
- 2 cups fresh spinach, chopped
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 1/4 tsp red pepper flakes (optional)
- Salt and black pepper to taste
Directions:
- Heat olive oil in a large pot over medium heat. Add the Italian sausage and cook until browned, breaking it into small pieces as it cooks. Remove the sausage and set aside.
- In the same pot, add the chopped onion and cook for 3–4 minutes until translucent. Add the minced garlic and sauté for another 1 minute.
- Pour in the chicken broth and bring it to a boil. Add the diced potatoes and cook for 10–12 minutes, or until they are tender.
- Reduce the heat to low and stir in the cooked sausage, heavy cream, and Italian seasoning. Simmer for 5 minutes.
- Add the chopped spinach and grated Parmesan cheese. Stir until the spinach is wilted and the cheese is melted.
- Season with salt, black pepper, and red pepper flakes, if using. Taste and adjust the seasoning as needed.
- Serve hot, garnished with extra Parmesan cheese and a drizzle of olive oil, if desired.
