Ingredients:
- 4 bone-in chicken thighs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1 1/2 cups chicken broth
- 1 cup long-grain white rice
- 1/2 cup shredded cheddar cheese (optional)
- 2 tablespoons fresh parsley, chopped (for garnish)
Directions:
- Preheat oven to 350°F (175°C).
- Season the chicken thighs with salt, pepper, and garlic powder.
- Heat olive oil in a large, oven-safe skillet over medium-high heat. Sear the chicken thighs skin-side down for 3-4 minutes until golden brown. Flip and cook for another 3 minutes. Remove from skillet and set aside.
- In the same skillet, sauté the diced onion for 2-3 minutes until softened. Add minced garlic and cook for 30 seconds.
- Stir in the cream of mushroom soup and chicken broth, mixing well. Bring the mixture to a simmer.
- Add the rice to the skillet, stirring to ensure even distribution. Place the seared chicken thighs on top of the rice mixture.
- Cover the skillet with a lid or foil and bake in the oven for 40-45 minutes, or until the rice is tender and the chicken is fully cooked (internal temperature of 165°F/74°C).
- If desired, sprinkle shredded cheddar cheese on top during the last 5 minutes of baking.
- Garnish with chopped parsley before serving.
