Ingredients:
- 1 lb ground beef
- 1 jar (24 oz) marinara sauce
- 1 can (14 oz) diced tomatoes, drained
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1 container (15 oz) ricotta cheese
- 1 1/2 cups shredded mozzarella cheese, divided
- 1/2 cup grated Parmesan cheese
- 1 egg
- 6-8 lasagna noodles, uncooked
- 1 cup water
Directions:
- In a large skillet, brown the ground beef over medium heat. Drain excess fat and stir in marinara sauce, diced tomatoes, Italian seasoning, garlic powder, salt, and pepper. Simmer for 5 minutes.
- In a mixing bowl, combine ricotta cheese, 1 cup mozzarella, Parmesan, and egg. Mix until smooth.
- Spread 1 cup of the meat sauce in the bottom of a 6-quart slow cooker.
- Layer 2-3 lasagna noodles over the sauce, breaking them to fit as needed. Spread 1/3 of the ricotta mixture over the noodles, then add another layer of the meat sauce.
- Repeat the layers (noodles, ricotta, meat sauce) two more times, finishing with a layer of noodles and remaining meat sauce. Sprinkle the top with the remaining 1/2 cup mozzarella cheese.
- Pour 1 cup of water around the edges of the slow cooker to ensure the noodles cook evenly.
- Cover and cook on low for 4-6 hours or until noodles are tender and lasagna is heated through.
- Let the lasagna sit for 10 minutes before serving to allow it to set.
