Ingredients:
For the filling:
- 3 cups diced apples (Granny Smith or your choice)
- 1/2 cup granulated sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 1/4 cup water
For the dough:
- 2 cups all-purpose flour
- 1 teaspoon salt
- 2/3 cup unsalted butter, chilled and cubed
- 5-6 tablespoons ice water
For frying:
- 2 cups vegetable oil
For topping:
- Powdered sugar for dusting
Directions:
- Prepare the filling:
In a medium saucepan, combine diced apples, sugar, cinnamon, nutmeg, and lemon juice. Cook over medium heat for 5-7 minutes until the apples soften. Dissolve the cornstarch in water and add it to the saucepan. Stir until the mixture thickens. Remove from heat and let cool. - Make the dough:
In a large bowl, mix flour and salt. Cut in the butter with a pastry cutter until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Form into a ball, wrap in plastic, and chill for 30 minutes. - Assemble the pies:
Roll out the chilled dough on a floured surface to about 1/8 inch thickness. Cut into circles using a 4-inch cookie cutter. Place a spoonful of apple filling in the center of each circle. Fold the dough over to form a half-moon shape and seal the edges by pressing with a fork. - Fry the pies:
Heat vegetable oil in a deep skillet or fryer to 350°F (175°C). Fry the pies in batches for 2-3 minutes on each side, or until golden brown. Remove and drain on paper towels. - Serve:
Dust the fried apple pies with powdered sugar and serve warm.
