Ingredients:

For the filling:

  • 3 cups diced apples (Granny Smith or your choice)
  • 1/2 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1/4 cup water

For the dough:

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 2/3 cup unsalted butter, chilled and cubed
  • 5-6 tablespoons ice water

For frying:

  • 2 cups vegetable oil

For topping:

  • Powdered sugar for dusting

Directions:

  1. Prepare the filling:
    In a medium saucepan, combine diced apples, sugar, cinnamon, nutmeg, and lemon juice. Cook over medium heat for 5-7 minutes until the apples soften. Dissolve the cornstarch in water and add it to the saucepan. Stir until the mixture thickens. Remove from heat and let cool.
  2. Make the dough:
    In a large bowl, mix flour and salt. Cut in the butter with a pastry cutter until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Form into a ball, wrap in plastic, and chill for 30 minutes.
  3. Assemble the pies:
    Roll out the chilled dough on a floured surface to about 1/8 inch thickness. Cut into circles using a 4-inch cookie cutter. Place a spoonful of apple filling in the center of each circle. Fold the dough over to form a half-moon shape and seal the edges by pressing with a fork.
  4. Fry the pies:
    Heat vegetable oil in a deep skillet or fryer to 350°F (175°C). Fry the pies in batches for 2-3 minutes on each side, or until golden brown. Remove and drain on paper towels.
  5. Serve:
    Dust the fried apple pies with powdered sugar and serve warm.
